MJ's Rice

Ingredients:
Olive oil
1 onion
1 clove of garlic
1 envelope of beef or chicken bullion
1 cup of rice
2 cups of water
Club House Roasted Garlic & Red Peppers seasoning
Vegetable - green peas or corn or mushrooms or red pepper etc

Preparation:
Cover the bottom of the pot with oil.
Cut up onions and garlic. The size will be a matter of your preference.
Add onions and garlic to the pot and apply heat.
After oil starts to boil add enough seasoning to cover the onions and garlic.
This may be a matter of taste so on your next attempt you may want to add more or less seasoning.
Stir the mixture until the onions appear to be softening. If some of them burn a bit it is ok.
Add the cup of rice and stir to get a consistent looking mixture.
Add the water.
Add the envelope of bullion.
Raise the heat to bring the mixture to a boil and stir occasionally so the mixture doesn't stick to the bottom of the pot.
Let it boil for about 5 minutes stirring to keep it off the bottom of the pot.
Turn off the heat leaving the pot on the burner and put the lid on the pot. It will take about 30 minutes for the rice to be ready. Don't take the lid off until you are ready to serve it. Removing the lid lets out the moisture and may make it necessary to add more water.

The vegetable can be added at various times depending on how you want it to appear in the final mixture, i.e.
- frozen vegetables or peppers, to look like they were just picked, should be added about 5 minutes before you want to serve the rice.
- fresh mushrooms will take longer to cook so you may want to add them just after putting the water in.

Option:
Scramble an egg, mash it with a fork and then add it at the same time as the water.
